How to prepare
- Thaw in the fridge, score the skin, season with ginger, garlic and pepper.
- Grill or fry whole until the flesh flakes easily, or add to a simmering pepper soup pot.
- Cook thoroughly until the flesh flakes and reaches 63°C internal.
Storage
- Keep frozen at -18°C until ready to use. Defrost in the fridge overnight — do not refreeze once thawed. Use within 24 hours of defrosting.
