使用精米歩合40%的山田錦並以低溫醸造的一款酒。當在酒蔵內聞到層次豐富的酒香的時候、將酒倒入袋子後吊起並不加任何壓力、讓酒自然地一滴一滴地滴下來然後入樽。
清水清三郎商店設定較低生產量、米總重量600kg至800kg左右。這樣的釀造方法更能觀察酒的變化、因此能造高出品質的酒。當然要花更多時間、不適合大量生產。可是這種規模的生產、易於觀察醗酵桶內麹及蒸米的状態或酵母的發酵進行情況。不止是大吟醸、所有種類的酒皆是以同樣的方式釀造。
而且一般來說、只在冬天造酒、現在一年四季都有在造酒。不計成本優化設備、而冷却設備則是採用可管理溫度較小型的、約一星期為一個造酒周期、這就是清水清三郎商店的造酒之道。

Makes a difference but maybe only to caffeine addled coffee snobs

I won't say that everyone urgently needs one of these. This is helped me up my game. Perhaps not absolutely necessary, but it noticeably reduces canalization and improves extraction. And it appears to have improved not only my espresso, but my pour-overs and my Mokapot (especially the Mokapot!). It's a little fiddley to assemble - there's sets of springs and needles - but once you get it all locked down, its very tight. There's a set of spares - I can't imagine needing them. The tool kinda sits in the weighted base, but it appears to stay put in my cabinet.
